I'm back to rabbit food for a spell after this.....

Chicken Fried Steak with chipotle cheese sauce. The beef is tenderloin I sliced thin and hand pressed down instead of pounding. Dredged in flour seasoned with Lawry's and pequin pepper flakes and tossed into the freezer to set up for an hour. Sauteed shallot, garlic, and chipotle adobo, added some cream, reduced, added some shredded jack and cheddar, tasted and adjusted the seasoning. Perfect. Fired up the oil in the cast iron dutch, yanked the meat out of the freezer, redredged in flour, into an eggwash of eggs and cream, dredged again, and then into the oil. Tossed in a few fries too....

MMMMMmmmmmm... Damn I hadn't had good chicken fired steak in a LONG time!! I might need to try something like that soon! :applaude

well ya can get these wonton wrappers already made up & I stuff em with gr pork, green onion, garlic, cayenne & a lil chinese 5 spice, use egg white to seal ema shut, steam *then* fry em up

just in a cookin up a storm mode this w/e I guess =)

Today it was Mexican chile glazed pork ribs

First some ancho/guajillo/garlic marinade

then after lettin the pork ribs take a bath for about 7 hours, into the oven

then, ya mix the remaining marinade with honey & baste em up, another 45 min or so..voila!

PAF!!! Holy mother of pig! That picture is exactly what this thread represents! :applaude I would eat those with my hands handcuffed behind me if I had to. Quaffing the beer to go with it may prove difficult though.

Here's some real blues food ya'll! Picked up some quail, pan seared it, roasted some garlic, reduced some balsamic vinegar, roasted some fingerling pots....good 'Gawd ya'll!! Sex on a plate! A bottle of Chimay Blue don't hurt a damn 'thang either!

That had to have been killer!!! :salude Experimented today and made some pork tamales with a tomatillo sauce that was muy bad azz!! :bug I also had a cold one (or six) and watched a Blue-Ray ZZ Top vid while they were steaming. I apologize, but the camera battery was dead or I would have gotten shots of them. It was so good though, that I plan to make them again for Mrs. DB next weekend on Superbowl Sunday... Will get picks of them and post them next Sunday.

Maybe I'll do this again next w/e in honor of N'awlins going to the big game .. I usually do this with crawfish, but I'm out & used prawns instead...worked jus' fine =)

PAF....Haysoos Christo on a crutch! That looks magnifique and truly worthy of the Hot, Blue, and Righteous rating! The 'peno roll is an extra bonus! I could eat that plate of hotness every day!!

Hey ya'll once again from the notsodryditch here in Las Vegas. Been raining off and on for 2 days now. Anywhooo...I picked up some very nice chix wings from the local hippy Whole foods joint. I reckoned a little Super Bowl finger food was in order. A compadre of mine down DFW way sent me some of his Bhut Jolokia Puree and what no better way to get some hot, blue, and righteous goin' on than to use it on the wings.

I tossed wings and bhut puree into a stainless steel bowl and tossed until well coated. Then dredged the wings in flour and then into the dutch oven deep fryer. 'Lemme 'splain you Lucy...this stuff burning hot magma!! But I got through the heat and immensely enjoyed the flavor of the puree and the wings. It was fantastic!!
