You might also want to consider a 2019+ Standard. These are non-weight relieved and have either 50s or 60s necks. Lots of interesting colors too...

As to your original question of cut… that doesn’t look flat sawn to me. Flat sawn usually has a good amount of flowing grain, which yours doesn’t appear to have. So that leaves quarter sawn or rift sawn. I’m by no means an expert, but my guess is quarter sawn.
