Yes the G string would egregiously slip out of tune... when I was 12 and didn't know how to properly wind and stretch them. But I learned and for 35 years (and counting) all the strings on my Les Pauls stay in tune.
I've bought quite a few LPs online and have yet to be disappointed. Solids and plain tops I will roll the dice on... but flame tops I will not buy without a pic first. Try AMS, they show pics of the premium tops and have lots of payment options. Sweetwater shows pics of all their guitars, but...
I've bought 3 new LPs since 2019 and they all have been spot-on... especially the fretwork (4th one is en route lol). One of them was a spontaneous buy at GC, similar to your experience. It was an Ebony Classic that blew me away right off the rack... wasn't leaving GC without it.
