My sweetened tuning for cowboy chords is to tune all strings from the low E.
When I'm alone and can hear (i.e. not at a gig or rehearsal) I just tune the strings 1 at a time with no fretting, tuning the A with a fork, then just listening to the interval. 3rds and 4ths are pretty easy to hear.
Even when I use a tuner, I've only had 2 guitars where the D cowboy chord is in tune. 1 is a beautiful '58 ES175 and the other is a decidedly not so beautiful '55 Kay budget student guitar.
They both also play very in tune all over the fretboard. Both have wooden bridges with little/no compensation.
So, there ya go.

I looked at JT's thing.
He is also compensating for using a capo which can pull the strings quite sharp.
As an aside...he is an awesome, underrated player.
There are folks whose voice and songs are so strong, they overshadow their playing, which just supports them.
Paul Simon is another.

I do think that the Petersen Pre-set for acoustic Guitar is the James Taylor tuning. ..
