Is it okay to leave the strings off of my R9 for over a week?

I'm doing an overhaul and waiting for PUPs that will be in next week.

probably fine...probably will need to do a little extra truss rod tweaking when you get the strings back on. And will probably need to tweak, wait a day tweak again, etc.

No big. Remember, only a 1/4 turn at a time!

The last time I asked our luthier about this, he got this funny little grin and slowly looked around the shop. He does the big jobs - neck resets on old Martins, headstock repairs on Gibson banjos (if you think an LP neck is fragile...), "My friend sat on it...", and the occasional lighter fluid disaster. There were maybe 20 guitars in various states of disassemblance, neckless, topless, etc., and many of them were still weeks away from completion.

I think el84ster is quite right - nothing will happen that a truss rod tweak won't fix, and you likely won't even need that.

No problem, just check the relief clearance , and adjust truss rod after you restring if necessary.
