removing the paint ( letters/#s ) on new strat knobs..

Nail polish remover is acetone which will dissolve some plastics, I would be wary of using that unless you have a spare knob that you don't mind destroying to try it on.

Maybe something abrasive and a toothbrush. Ajax maybe? They sell knobs with no numbers on them.

I’ve bought the all white before and the color is terrible plus they have more of a matte finish rather than gloss ..rather than mess the ones up in this pic I’ll just leave it as is .I do think plain white would look sweet on this hendrix strat

Knobs for Strats are cheap enough to risk knackering them. Acetone (nail polish remover) would be my first instinct - I was a chemist by profession - but I can't remember whether the plastic they make knobs from is compatible or not.
I'd recommend buying a spare set of the knobs and trying it on them, rather than the ones fitted to the guitar. If it works, swap 'em over. If it doesn't, buy another set and try meths.
I might even be inclined to start by trying hot soapy water and a toothbrush, but do it all on a spare set, not the originals.

I don’t stare at my guitar’s controls long enough to get concerned.That said, looking at those
Knobs with no words or numbers is disconcerting to me. They look huge…and incorrect. Lol…I am old school, I suppose.
