Sonny Landreth another not mentioned yet.

Good call! He's otherworldly.

For those who haven't heard the man Eric Clapton called "the most advanced" musician in the world, listen to this duet with Tom Principato:

You guys named a whole bunch of the regular heavy hitters for sure!
Even though he plays an Xotic a lot - he still plays strats - Mr. Chris Duarte! I have been a fan since before the freightliner tour!

A king of Western Swing: Eldon Shamblin. He had a gold '54 up until the end given to him by Leo. He was a "rock star" amongst musicians back in those days in California. If you played with Bob Wills, you were The Shit and Eldon had since the '30s.

I don't think anybody's mentioned him in this thread, but I thought Robbie Blunt had some great moments with Robert Plant, and did a great job as Plant's first "replacement" for Jimmy Page. Impossible shoes to fill, but the difference in tone between the two men helped to bridge the gap remarkably well. Blunt's playing on "Big Log" is really pretty -- and his tone is excellent:

Agreed, Robbie Blunt was IMO the most creative and melodic of Robert Plant's post-Zeppelin guitarists.

Thinking about it now, some of my favourite Strat moments have come from Jimmy Page. I don't really think of him as a "Strat player" though, for obvious reasons.
